Principle of Operation

The system detects fire through heat-sensitive detection mechanisms installed within the kitchen hood. Upon activation, it releases a wet chemical extinguishing agent that reacts with hot cooking oils and grease to form a soapy foam layer (saponification). This layer effectively cools the surface, suppresses flames, and prevents re-ignition by sealing off oxygen from the fuel source.
